BEHOLD: the perfect Fall baking recipe for those of us who can’t bake for sh*t

Hey, you! Yes, you!

It’s Fall, and you know what that means. Cozy sweaters, an alarming plethora of new Hallmark Channel original movies, and aggressively spicy pumpkin-flavored things.

Perhaps among at least one of the aforementioned things is the commonly held desire everyone feels to start baking all of a sudden. It’s actually hilarious if you think about it, because I feel like so many of us (myself) don’t really think twice about making baked goods (consuming them, of course, is another story) and yet come Fall time we’re all Duff Goldman. And I’m sure there are various reasons for this, one of the more obvious ones being cold weather and warm treats = happy humans.

And if you’re a pseudo-chef like myself and want to fake it all the way through Fall, I have good news for you. Brea of Treats by B is here to make your Autumn dreams come true, one warm pastry at a time.

APPLE PIE CUPCAKES:

Ingredients:

  • 2 cups of flour
  •  ½-1 cup of sugar (depends on how sweet you like it)
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ½ stick soft butter
  • 3 eggs
  • 1 cup of water
  • Vanilla extract
  • ½ cup of diced peeled Granny Smith apples
  • 1 tbsp of cinnamon sugar
  • Caramel sauce (for drizzling)
  • Cupcake liners

Instructions:

  1. Preheat oven to 350 degrees.
  2. Blend sugar and butter until smooth. Beat eggs into mixture one at a time. In a separate large bowl mix all dry ingredients. Add the first mixture into the large bowl adding the cup of water as you whisk. Stir in vanilla extract, cinnamon sugar and the diced apple. Whisk until well blended.
  3. Pour into baking cups filling each a little past halfway. Be careful to not fill the batter all the way to the top or cupcakes will overflow in the oven!

How’d you first get into baking?

I’ve always had a strong interest for baking ever since I was little. I really got into it when I was about 8 years old and pretty much learned my foundation from my grandmother. I would watch her in the kitchen growing up until I was deemed old enough to use the oven on my own.I officially made it a legal business back in 2015.

What’s your favorite cake flavor at the moment?

Every week I have a new favorite because I’m just constantly around sweets and coming up with new ideas. However, this week I had about a dozen red velvet cupcakes so that holds the number one spot at the moment. You can never go wrong with a classic flavor. Especially that one. Cake pops are also my current favorite.

Cake pops rule. So, are there any common baking misconceptions you want to debunk right here and now?

Omg yes! There’s this weird misconception going around that if you put cake/cupcakes in the freezer it dries cake/cupcakes out. Wrong. When you take it out of the freezer and allow it to thaw out, the cake absorbs the condensation helping to make it more moist. Just make sure you cover your products properly and label.

There’s also this misconception that vegan desserts are bland and not good. WRONG AGAIN!

Not only do a lot of the items taste delicious but they are also healthier for you. You can find vegan bakeries and ice crémeries around a lot more these days try them out!

We’ll take your word for it. Okay so I have to ask, what’s like a super easy recipe that anyone can make for their date to impress them?

Red velvet cupcakes with chocolate covered strawberries on top are the perfect duo pair for a date night! It’s sexy, sweet and easier than it sounds to make. Not only will you impress them with your baking skills, it’s also such an intriguing dessert!

RED VELVET CHOCOLATE COVERED STRAWBERRIES:

Okay, so you’re a beginner and the time has come for your’ first official date with said person. You really want to impress them with a homemade dinner and dessert. Don’t worry, I’ve got you covered (literally). Here’s what you’ll need to pick up from your local store.

Ingredients:

  • Duncan Hines red velvet cake mix
  • Cupcake liners
  • Duncan Hines/Betty Crocker cream cheese frosting
  • Eggs
  • Vegetable Oil
  • Fresh strawberries
  • Ghirardelli chocolate (for melting, find in baking section)
  • Wax paper

Instructions:

Before anything, take a picture of or write down the instructions on the back of the cake box and throw the box away outside girl. You’ll impress your date by making them curious as to whether you actually made the entire dessert from scratch.

Now, we’re ready to start.

  1. Follow the instructions on red velvet cake mix and pour batter into the cupcake liners. Fill the liners a little past halfway. Do not fill liners all the way to the stop or cupcakes will overflow.
  2. While the cupcakes are baking, use this time to wash and prep the strawberries. Grab a cup (preferably a small mug) or bowl and melt down the Ghirardelli chocolate. Once it’s melted, dip the strawberries and drain any excess chocolate. Place on wax paper.
  3. Once the cupcakes have cooled off you’re ready to frost. You can use a kitchen butter knife or buy a piping bag with tip from your local grocery store in the baking section. (Usually by the Wilton brand). I hella recommend using the frosting and tip to give the frosting some extra height.
  4. Frost and add one chocolate covered strawberry on each cupcake. Set them up on a cute, fancy plate and they are ready to serve!

What are some of the best in-store baking products for beginners?

For baking, you can never go wrong with brownies. Betty Crocker is a great store brand to start out with if you’re a beginner. Plus, if you want to get really creative, you can add ice cream, fruits or whatever other toppings you’d like! Everything is 100% from your local grocery store. The Betty Crocker brownie mix can sometimes even be found at the $1 store. This would also be a great idea for a date!

For shopping, I highly recommend checking out “Sur la Table”. It’s a great place to shop for beginner cooks and bakers. They literally have everything from small appliances, utensils and specialty boxes for cakes and other desserts. My only tip for this place is to come prepared to spend some money.

It’s almost like shopping at Target, but just in the kitchen section. You leave with more than you planned, always lol. Make sure to grab a whisk and spatula on your way out! They are your best friends when it comes to baking.

In what ways has baking changed your life?

Baking has changed my life tremendously especially over the past year. Although I’ve been doing it pretty much my whole life, I’m finally starting to head in the direction I’ve been steering towards for years. I really like getting creative with themed treat tables and catering parties.

Baking in general really does give me an unexplainable feeling knowing that I can create not only something sweet, but a product that can really make someone’s day because it tastes that good.

What’s your ultimate secret ingredient?

Honestly, love and dedication. It sounds corny but anyone can make a cupcake. To me though, it’s really what you put into it personally effort wise that adds that special touch. If you love what you do with all your heart, you’ll always flourish with anything you touch.

Binge watching any baking shows at the moment?

Chopped is a great show that I cannot get enough of. Cupcake Wars is forever a classic that I wish the Food Network would bring back but for now a ton of reruns are cool. I pretty much just binge Netflix in general. They have a series of different shows that not only teach you about baking, but series of shows that travel across the world to the most popular bakeries.

Who’s your favorite celebrity chef?

The 2019 version of myself because she’s coming 🙂

But for now, Patti LaBelle and Ayesha Curry are currently my favorite chefs. Patti is southern and sassy while Ayesha is sweet, yet witty. My favorite type of women.

What’s next for you going into next year?

Whatever God has in store for me! I feel that whatever is meant for me will be for me.

I’m super in to manifesting and being open to following every opportunity thrown my way so I’m just going with the flow for now. I really just hope to touch more tastebuds. I want to be able to touch a series of people with my brand. There will be workshops for children and teenagers who want to begin learning baking at a young age.

I also have a YouTube channel for “Hella Baked by B”and want to get that consistently rolling. I’m very excited to have a channel dedicated to innovative medicinal cooking and look forward to having some fun with my viewers who like CBD and THC infused products.
