Your Summer Gets A Little Sweeter With Olivia Culpo’s Skinny Popsicle Recipe

Want to enjoy delicious summer treats without compromising your summer body? The combination doesn’t seem mutually attainable, but Olivia Culpo wants you to know they are—the pageant queen turned Instagram fitness and beauty guru has shared her favorite healthy popsicle recipe with Galore, and it actually looks pretty good. Skinny Peanut Butter Cup Fudgsicles 

You’ll Need:

1/2 cup Greek yogurt

1/2 cup low fat cottage cheese (or more Greek yogurt)

1 1/4 cup unsweetened almond milk

3 Tbs. unsweetened cocoa powder

2 Tbs. natural peanut butter or PB2

6 packets of stevia or whatever natural sweetener you prefer (I used liquid stevia drops). Make sure it’s extra sweet because some of the sweetness will go away once frozen!

A pinch of salt

Directions:

1. Blend all ingredients.

2. Freeze for 4-6 hours. It’s okay if longer!

*This recipe makes about 6 Popsicles (each Popsicle= 1 about 1/2 cup).

*The peanut butter sauce is just coconut oil on medium heat with peanut butter, and stevia.
