Galore Recipe: Linzer Cookies!

These cookies are like throw-back to your grandma’s Christmas. Totally vintage. Totally cute. I make these every year because my guests can’t get enough (and neither can I…the jam center on sugar cookie is outrageously good.) Enjoy, Christmas kittens xxx

Linzer Cookies

3/4 cup butter
1 cup sugar
1 tsp vanilla
1 egg
2 1/4 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/2 cup powdered sugar for dusting
1/2 cup raspberry jam for filling

In a stand mixer, beat the butter and sugar until light and fluffy.Add the egg and vanilla and beat until smooth and well combined. In a medium bowl whisk together the flour, baking powder, baking soda,and salt. Add this mixture to the butter mixture in thirds. Beat until well combined and it forms a dough. Split the dough into two equal parts and shape into disks. Wrap each in plastic wrap and cool in the fridge for an hour (can also keep overnight if made ahead).Remove dough from fridge and allow to warm up to room temp. for about
15mins before rolling it out.

Preheat the oven to 375F/160C. Line two baking sheets with parchment paper. Set aside. On a lightly floured surface, roll out the dough to 1/8inch in thickness.
Cut star shapes out with a large star shape cutter, and make small star shape holes in half of the stars (so there will be a a top with a cut-out centre, and a solid bottom for each cookie).
Bake for approx. 6-8mins until just starting to turn golden brown.
Remove from the oven and allow to cool.
Separate the tops from the bottoms. Dust the tops with powdered sugar.
Place 1 tsp amount of raspberry jam in the centre of each solid bottom. Top the bases with each powdered top.

Makes approximately 20 cookies.
